1. Heat half of the coconut milk or cream in a pan or in the oven and boil for around 3 minutes. Add the vegetables, kaffir lime leaves, curry paste and garlic paste and simmer for a few minutes. Add the remaining coconut milk or cream and the fava bean mince and simmer for around 10 minutes. Season with sugar, lime juice, fish sauce and kaffir lime leaves.
2. Adjust seasoning and top with crushed salted peanuts, spring onion and lime wedges.
3. Serve with noodles or jasmine rice.
